Current Favorite Snack: Chia Seed Pudding

I’ve been consuming chia seeds as part of my diet fairly regularly for nearly two years now. They’re incredibly easy to incorporate in just about everything though I personally love to add them to omelettes, yogurt parfaits, and a co-worker of mine has even tried them with his morning coffee (!) – while I have yet to be bold to try chia seeds in coffee, I’ve recently discovered another ingenious way to feature chia seeds as a vegetarian breakfast or snack. All you need are two basic ingredients!

Chia Seed Pudding

Ingredients

  • 1 cup vanilla almond milk (or soy, coconut or hemp milk – whatever you like most!)
  • 1/4 cup chia seeds
  • Optional: fresh or dried fruits, nuts, granola, cinnamon

Combine milk and chia seeds in a container; shake vigorously so seeds are evenly hydrated then refrigerate overnight or for at least three hours. Top with slices of fresh or dried fruit (personally love dried cherries or dried plums) and a dash of cinnamon for a healthy vegetarian breakfast or snack.

It’s important to note that I’ve tried adding raw honey to the mixture but found it far too sweet for my liking. While I like to use vanilla-flavored almond milk (as this adds a subtle vanilla flavor to the pudding) if you only have plain almond milk on hand, add a drop or two of pure vanilla extract before you mix/shake for a pleasant addition of vanilla flavor.

I’ve been guilty of being far too stringent on my health/nutrition from time to time. On the occasions when we fall off-track and notice we haven’t been treating our bodies the best, I think it’s always useful to make certain reasonable tweaks in our diet to try to get back on track to eating healthy whole foods. For me, the reminder to reduce consuming foods with added sugar and to increase my intake of fruits & vegetables in lieu of processed foods is always a solid starting point to get myself back on track. Of course, proper eating & fitness truly go hand-in-hand – it’s hard to be successful at one without the other. More to come on that in the future!
